Cheong : Korean Fermented Syrup

I originally saw this on youtube awhile ago while I had a container of strawberries that were 3 days away from the compost. I simply washed, cut into smaller pieces, and layered the strawberries with white sugar in a canning jar and put it on my pantry shelves to sit and ferment. Overtime with an occasional stir the sugar dissolves and the strawberries let off their juices and it all turns into a syrup together (duh). The result smelled strongly of strawberries and also had a bit of an alcohol smell to it when you first opened the jar. It tasted straight up like strawberries though. Later I used the method again when making some sort of alcoholic liquid (not exactly sure what to call it). I used about a half gallon of green tables grapes that grew on my property and threw them in a big container with white sugar to ferment and turn into a syrup, then eventually I strained the grapes out and continued to ferment the liquid. I added water and yeast to it and it's been sitting fermenting for awhile now. Not sure what to do with it.


I've made the strawberry syrup multiple times, we used it for mixed drinks for a party one time as the simple syrup in a mojito type cocktail. That cocktail was actually super super great so here is the recipe.


2oz Rum

1oz Strawberry Cheong

3/4 oz Lime Juice

Finish w/ Club Soda

Mint


I currently have a jar of it that is about 3 weeks in. I do not know a ton about this or the right way to do it etc, I am just guessing and going off of the video I saw months ago.
